Ingredients

  • 1 Sweet PotatOH
  • 1/4 cup low fat sour cream
  • 2 strips of turkey or vegetarian bacon, cooked and chopped
  • 1/4 cup green onions – green parts only – chopped

Directions

  1. Cook the 1 Sweet PotatOH in the microwave according to package directions while you prep the bacon and green onions.
  2. Slice the potato into 1/4″ coins and arrange on a plate. Top each coin with a dollop of sour cream and sprinkle the whole plate with bacon and green onions.
