Potatoes are naturally gluten-free. To be sure this dish is, too, double check the label of the ingredients indicated with a “*” to be sure they are gluten-free.
Ingredients:
- 3 Express Bake PotatOHs
- 1/2 cup each nonfat plain yogurt and fat-free milk*
- 3/4 cup coarsely chopped, loosely packed fresh spinach
- 1/2 cup shredded low-fat sharp cheddar cheese*
- 2 tbsp real bacon bits*
- Salt and pepper
Directions:
1) Microwave PotatOHs on high 15 minutes. Use oven mitts or potholders to remove them from the microwave. Let cool for 3 minutes and then remove wrapper.
2) Place cooked potatoes into bowl and mash well.
3) Stir in yogurt, milk, and seasonings. Add cheese and bacon bits. Cook for a minute or 2 more to heat if necessary.
